Ingredients 

  • 2 cans 5 oz each tuna in oil, drained (Genova Premium Yellowfin Tuna in Olive Oil, Wild Caught, Solid Light)
  • 1 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 1 can 15 oz cannellini beans, drained and rinsed
  • 4 cups arugula
  • Your favorite dressing such as vinaigrette or lemon garlic

Instructions

  • Start by draining the tuna and flaking it into a large mixing bowl.
  • Add halved cherry tomatoes, thinly sliced red onion, and drained white beans to the bowl.
  • Gently toss everything together until well combined.
  • Arrange a generous handful of arugula on each plate, then top with the tunafish mixture.
  • Drizzle with your favorite dressing – a simple vinaigrette or lemon garlic dressing works wonders.
  • Serve immediately and enjoy the fresh, vibrant flavors!
