Ingredients 

  • 1 lb chicken tenders
  • 1 cup Gluten Free breadcrumbs Swap for Non Gluten Free
  • 1/4 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Mixed greens e.g., romaine, spring mix, spinach, arugula, kale
  • Assorted vegetables e.g., cherry tomatoes, radishes, cucumber, bell peppers, carrots
  • Fresh basil leaves

For the Lemon Basil Dressing:

  • 1/4 cup olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp honey or maple syrup for vegan option
  • 1 clove garlic minced
  • Handful of fresh basil leaves chopped
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a shallow dish, mix together breadcrumbs, Parmesan cheese, paprika, garlic powder, salt, and pepper.
  • Dredge each chicken tender in the breadcrumb mixture, ensuring it’s evenly coated, and place them on the prepared baking sheet.
  • Bake the chicken tenders in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through.
  • While the chicken is baking, prepare the salad by tossing together mixed greens, assorted vegetables, and fresh basil leaves in a large bowl.
  • In a small jar or bowl, whisk together olive oil, lemon juice, honey, minced garlic, chopped basil leaves, salt, and pepper to make the Lemon Basil Dressing.
  • Once the chicken tenders are done, let them cool slightly before adding them to the salad.
  • Drizzle the Lemon Basil Dressing over the salad and toss gently to coat everything evenly.
  • Serve immediately and enjoy!
