Shrimp and Zucchini Bowtie Pasta in Red Pepper Sauce
Ingredients
- 8 oz gluten-free bow tie pasta
- 1 lb shrimp peeled and deveined
- 1 medium zucchini sliced
- 1/2 red onion diced
- 1/2 cup carrots julienne
- 1/4 cup sun-dried tomatoes chopped
- 1/2 cup red pepper bruschetta spread
- 2 cloves garlic minced
- 1/2-1 cup low sodium chicken broth amount will vary per preference
- 2 tbsp Olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
- Spicy Italian Sun -dried tomato spice *See Notes
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a bowl mix combine shrimp, seasoning, set aside.
- In a large skillet, heat a drizzle of olive oil over medium heat, then add the sliced zucchini, red onions and carrots. Cook until tender-crisp, about 3-4 minutes. Add garlic, stirring occasionally, until the garlic softens,

- Add the shrimp, sun-dried tomatoes, to the skillet. Cook until shrimp turn pink.
- Add the cooked pasta, and red pepper spread to the skillet. Stir until everything is well combined and heated through.
- Garnish with fresh parsley before serving.
